I'm not sure about the common script but before the Arab invasions, Punjab was a hot spot for Hinduism and Buddhism, so I'm thinking Sanskirt was used by the scholars and poets/writers. Not sure about the common script, will get back to you on that.

Gurmukhi isnt a language, its a script, punjabi is very close to Gurmukhi
Guru Granth Sahib was first compiled as the adi granth by Guru Arjun which includes various scriptures from the Gurus and muslim and hindu saints
the book consists of many languages including persian, sanskrit, arabic, punjabi etc
but its all written in Gurmukhi script
